Egg Casserole
I have always loved omelets. A basic omelet recipe is simple but can be customized so easily and in many different ways. I like a basic omelet with cheddar cheese or if I’m feeling really fancy I add in some Gruyere. I like to plan themed omelets too.

Tuna Salad
I have always loved tuna salad. When I visited my grandma in the summer as a kid she would make tuna salad for lunch and serve it with Ritz crackers. That meal with a glass of icy Kool-Aid was a great source of energy for a very active pre-teen boy.

Ranch Cottage Cheese Dip
Veggie dips are a great way to add and enjoy more vegetables in my diet. Carrots, cucumbers, cherry tomatoes, broccoli, celery or whatever you choose can be extra delicious with a creamy and savory dip. Prepared dips at the grocery store are heavy on fat and calories though without much protein.

Chicken Stir Fry
Authentic stir-fry is very hard to recreate at home. Traditionally, it is cooked in a very hot wok with a high smoke point oil. This method keeps the vegetables lightly cooked and crisp and gives the protein a great maillard reaction without overcooking.

Egg Casserole – Chorizo
This is the 3rd week in a row I planned egg casserole for breakfast but I am changing it up. The blended mix of eggs, cottage cheese, chia seeds, and nutritional yeast has worked really well as a binder and the bulk of the dish.

Salmon Patties with Flax
Salmon is one of my favorite types of fish to eat and also very healthy. I am very lucky to live close to Lake Michigan so fresh Salmon from the lake is readily available. I can also buy locally smoked salmon with all kinds of flavor profiles. My two favorites are cherry wood smoked and maple bacon.
